These tasty turkey and bean burritos are the perfect choice for a quick dinner
MAKES 8 SERVING/ TOTAL TIME 35 MINUTES
INGREDIENTS
8 (7 to 8 inch) flour tortillas
1 pound ground turkey breast
1 cup chopped onion
2 cloves garlic, minced
1 cup no-salt-added black beans or pinto beans, rinsed and drained
½ cup salsa
2 teaspoons chili powder
½ cup shredded Cheddar cheese (2 ounces)
½ cup shredded lettuce
1 teaspoon Fresh pico de gallo
METHOD
STEP 1
Preheat oven to 350 degrees F. Stack tortillas; wrap in foil. Heat in the oven for 10 minutes to soften.
STEP 2
Meanwhile, for filling, in a large skillet, cook turkey breast, onion and garlic over medium heat until meat is brown and onion is tender, using a wooden spoon to break up meat. Drain off fat. Stir beans, salsa and chili powder into meat mixture in skillet. Heat through.
STEP 3
Spoon about 1/3 cup of the filling onto each tortilla; top each with 1 tablespoon cheese and 1 tablespoon lettuce. Roll up tortillas.
STEP 4
If desired, serve with pico de gallo.
